2018 Grenache Rose
100% Grenache, El Camino Real Vineyard, Santa Barbara County
Light pink with copper hues, under-ripe strawberries, lychee, and elderflower aromas. Pink grapefruit, white peach, and gooseberries are immediately followed by light spritz and slate minerality on the palate. A perfectly crisp aperitif.
On October 3, 2018 we received a ton of El Camino Real Vineyard Grenache. We crushed a portion of the grapes directly to the press and let them sit on the skins for three hours before being incorporated with the remainder and gently pressed off the skins. One week after pressing the juice was racked and inoculated to promote a cool, temperature-controlled fermentation. We take great care in handling the grapes and resulting juice to avoid unwanted oxidation of the delicate, aromatic compounds. We employ these techniques, combined with cool fermentation and a yeast strain known to enhance volatile aromas, in order to emphasize compounds called “thiols”. These molecules are responsible for many tropical fruit aromas in white and rosé winemaking. This delicate method of releasing more thiols into the juice gives a perception of sweetness to the final wine without having residual sugar. Post fermentation the wine was racked again and left to age in a chilled stainless steel tank for three months before being bottled in January 2019.
