Wine Notes:
Made primarily from the red grape Pinot Noir, this is a complex, medium-bodied, brut sparkling wine. Crafting white wine from red grapes demands meticulous attention: hand-picked, early morning harvest, ideal ripeness, and gentle pressing. Achieving a harmony of vibrant flavors, brisk acidity, and minimal tannins is the goal. Barrel and malolactic fermentation contribute richness and body, while yeast contact in the bottle (Méthode Champenoise) creates a toasty profile.
The 2021 Blanc de Noirs boasts a profusion of fragrances, featuring luscious hints of ripe peach, crisp apple, succulent nectarine, and sweet candied lemon. Its invigorating bouquet is further hightened by white cranberry, zesty tangerine, tropical guava, delicate jasmine and honeysuckle. Upon sipping, the palate is greeted with flavors of succulent white peach, velvety pear, tangy clementine, and a refreshing lime sherbet, beautifully accentuated by subtle undertones of ginger, sugary cookies, and velvety vanilla custard.
